(BTW, in "The Line" he referred to Alejandro's power as "delicious". Not proof, but another line of dialogue to make us think hes snacking on GRAY matter.)
Something I just thought of has me perplexed too: the Company scientists said they couldn't find evidence of his having any power beyond telekinesis. Why? However he "imprints" these powers, apparently he only physiologically shows the TK.

Well he is a psycho, so yeah i guess he would eat it all, whether he needed to or not.
I personally think this is something that will always be a mystery. I think they'll keep certain things mysteries to keep people watching, and they'll give us tidbits and clues here and there throughout the show. I think they're purposefully vague about what Sylar does with the brains. Heck, the writers probably don't even know.

We know that Sylar can use multiple abilities simultaneously ("The Hard Part"), so for me, this signifies that just before he was examined, his body was in "TK" mode, which is why they only could see TK in his system at The Company, whereas in "The Hard Part" at his mother's apartment, his body was in "TK + Cryo" Mode.
I don't remember that episode clearly, but is it possible that at the time the Company assumed that Sylar only had one power, so when they found that he had TK, they didn't bother to look for any others?

Speaking of Ms. Gray---- His fingerprints were all over her apartment when he killed her.... Even if he used some stupid TK trick to hide all fingerprints, he is not around the city he lives, therefore he's sort of a suspect... When will the police call Sylar out for being a normal human bad guy? Not that they can do anything to his ass (well, now they can) but it's kinda dumb how they're trying to make them seem like simple humans with extraordinary powers when the simple human issues aren't applied due to their extraordinary powers. Like---Isaac killed Simone, nothing happened. Sylar killed mommy, nothing happened. Nikki killed those d-bags from Linderman's crew and although she buried them in the desert, nothing happened. DL killed Linderman and left him in the building with his head all goo'd up, nothing happened (that we know of yet). .... Just waiting for the everyday people to interact. Even in Xmen the cops would interject then get punked... atleast showing they were aware that things were going wrong.

Sure it was a 'secretish' game of poker i guess but everyone got wasted and nobody says, "hold on, there were two Japanese guys there aswell". hmmm, Simone is explainable, she had no other family and Candice and HRG 'help' i guess. U got a point it is thin, very thin.

Most of these murders were covered up by company professionals. Evidence was removed, destroyed, or doctored as required, and it looked like the company probably also had a judge and/or key individuals in law enforcement under their collective thumb.
Simone's murder was completely cleaned up and covered up by the company. She's "touring Europe indefinitely." Must be nice to be rich - that would never fly if I disappeared!
Niki confessed to Jessica's murders and went to jail. When Linderman wanted her out of jail, he arranged to have "a rather nasty gentleman on death row" confess to her crimes, and I imagine he applied some kind of pressure to a judge (or whoever was required) to get Niki's case dismissed.
Linderman's body was cleaned up by the company. They might have made it look like a more ordinary murder to keep the existence of people with powers a secret, although I don't know any particular reason for them to protect DL. The company must have had enough information about DL to suspect him as the killer.
If Gabriel Gray's prints are not on record with the police for anything, they have a bunch of unidentified prints. Gabriel Gray might be a suspect, but until they find him, there won't be anything to compare the prints to.

I'm not sure what you mean. Gabriel Gray hasn't been seen lately at his last known address? As I said above, he could well be a suspect, but they're going to have to find him. He has no job, no fixed address, and there's not much of a lead what state or even country he's in right now.
Sylar has been called out as a regular bad guy, sort of. Matt and Audrey spent the first part of Season 1 looking for the serial killer who cuts open heads and doesn't leave fingerprints.

UMMMM.....he DOES eat it! He's already made comments about, "Sinking his teeth in"! Plus there isn't many other ways that he would be able to absorb the powers. I think that is the whole point of him opening the brain, so he can find the specific area that holds the person's special ability, then to INGEST it! Yum-yum!
