I don't think she'll ever mimic anything superhuman or be able to fly, but with training such as a martial artist OR a marine goes through, she would become ONE TOUGH hombre, don't you think?
Her only limitation would be her own strength and muscle "memory" as someone has already said.

What about when she meets Peter? He is super strong and can then mimic what he sees.
Also, do you think she has the ability to improv, or that she has to copy it exactly as seen (i.e. can she mix up the moves)? I know the swinging around the pole wasn't exactly like swinging around the ropes, but if she learns something like in the style of kata, can she take pieces and put them together in any order, or does she have to complete the pattern exactly as she saw it?

I was wondering this also... To what extent could she improvise her own moves? Like if the baddie was on the other side of the pole, what would've happened? Also, with the Matrix watching, that WOULD be cool, but would it matter if it was real or fake? If it didn't, she should get friendly with a CGI-wizard
And in her defence, I think she'd be a good hero... much like Hiro, she has the slightly-self-worthy attitude to life, but her heart is most definitely in the right place, she thinks a LOT about how she can help others, and she could have been forgiven for running out of that burger place after a gun was just shoved in her face, and for no other reason than because it was right (I don't think the manager's life was really in danger) she turned back and faced the bad guy with a gun.
Which brings me on to another point, how aware is she that she is doing these things? As said, is it presently just a muscle memory thing? She didn't realise she was carving the tomato, and the wrestling move could've been just a matter of instinct, as if her body believed she'd done it a thousand times. She'll probably get it completely under her control once she understands how it works.

Just what I was thinking ... and, if TV is somehow the key, it would be a great Heroes answer to the critics who have been saying for years that watching TV is a waste of time (I've been saying for years and even written a couple of books that show that watching TV is actually good for you)...
If she were to watch something like "A Baby Story" on the Lifetime channel, or something to that effect, would she get pregnant, and deliver all in the same day?
Because to be honest, that's what some of you are alluding to here.
Not only does she recall what is done, but she can recall the actions taken to get where that person she watched got to.
It's like this:
She comes home from work, and sees a documentary on farmers picking corn.
She steps outside, feeling kind of hungry, and finds a field of corn where her grass once was. Then she immediately goes into 'picking mode' and does her thing. But where'd the corn come from?
The same reasoning is why I don't think she'll be able to mimic special feats, such as strength, or mental powers. If she works out and builds her muscle and stamina, sure, she could do some amazing things, but just out of the blue? NAH..
I take Martial Arts. We learn Katas. They are muscle memory. However, if you're narrow minded, you never advance beyond them. The trick is to incorporate what is in all the techniques and all the katas and be able to meld them together into your own "fighting style".
The question is this: With training, would Monica be able to be a very potent weapon OR is she just limited to what she sees? Can she improvise?
Interestingly, my second favorite series, Bionic Woman, is wrestling with the same question: The machines in Jaime give her training and ability that make her predictable. Her trainers are trying to break her OUT of that mold, trying to tell her that she is more than the machine.....

the baby story thing is funny, i get what you saying but it wasn't a very good example because of course she can have a baby. shes a woman.

Since Peter can also fly, that would make some of those moves in kung fu movies physically possible, too.
I think strength to perform the action may be part of Monica's package, but if she can also mimic powers, that really makes her more like Peter. She would have to see it done (I don't think he does), but she would know what she has. I think she won't be able to mimic the special abilities.
So Micah said she was a muscle mimic. I'm wondering if that was supposed to be her on that cover of 9th Wonders he showed her?! She looked all ninja like!
