I don't think it was ever stated that Adam himself controlled the weather. I believe it was just an example of the "good things" the Older group had done. Bob shows the weather article from Miami to Nathan after saying that Adam had convinced the group that they could make the world a better place for their children. I think it's just implying that it was accomplished by part or all of the Older group.
Here's an idea as well. Maybe Papa Petrelli isn't Nathan and Peter's father after all. Remember when Angela was interviewed by Matt and she made a comment something along the lines of Kaito and her not sleeping together, well at least not recently. What if Kaito is their father, or anyone else for that matter, then maybe Adam wouldn't mind killing them off since they really aren't his children.

Since the Haitian can block people's abilities, and aging is just your cells inability to repair and replace themselves, in theory Adam should just grow old really fast and die (like that scene in Indiana Jones and the Last Crusade when the bad guy drinks from the wrong cup).

The haitian doesn't block all types of abilities, just some of them. Regeneration isn't one that he blocks.
Also about Adam, we learned last night that his blood is the crucial to his regenerating. This might be why they wanted Claire. Does this also mean that anyone who has Adam's blood can regenerate or that it just helps to recovered when applied while injured? In any event, he healed Nathan, so does this mean he might not be so "bad" after all?

I don't think that Adam would die right away if the Haitian blocked his ability - it would take decades! In other words, the healing wouldn't be reversed by the blocking of the ability, just stopped. Basically, he wouldn't heal anything new (at least not as long as the power was blocked) but old stuff wouldn't come back just because he lost his healing ability.
Think about it this way - the Aids virus damages the immune system. When a person is in full-blown Aids infection, they become unable to fight illness - i.e. any germs currently present or newly introduced. They don't suddenly regain every cold, flu, pox, etc. that they ever had just because the system which facilitated their recovery is no longer active.
And I definately think that the Haition's ability to block other people's abilities is active rather than passive - he can choose to block someone or not - or possibly just to block powers or not. (either an ON/OFF switch for powers in general, or a switchboard where he can suppress certain people and leave others capable)
But I think he has definite control over whether to block or not, as Eden is able to use her persuasion on Sylar when the Haitian was present in "Homecoming".

The aging process would just start back up from where it left off when his ability manifested. I also posted something quite similar to what you're saying over in the Kensei's healing of Nathan will wear off thread. Great minds think alike!
Ok here's something else I just thought of, it's a little out of the box though. What if the whole Adam is a prisioner of the company was just a show? What if the whole intention was for Bob/Adam/the Company to gain control of Peter as he is the strongest Hero? Reasons to make me think this. One, why would they place Adam next to Peter? Maybe just coincidence though. Two, if Adam is so bad, why didn't they give him the virus? Remember Bob's words to Mohinder about Monica that some powers are too dangerous? I'd think Adam's would qualify! Now on the flip side of this, maybe they realize his healing blood is too important to just kill him off. Now last night we saw Elle zap Adam leaving him disabled, but in the present he meets Peter at the Montreal warehouse. How did he escape? All part of the show? Thoughts?
Bob said that Claire may be the key to stopping the virus. If she and Adam have the same ability, then it would stand to reason that he is similarly equipped to stop the virus. This also means that both Claire and Adam may be immune to the virus - since the power they possess heals the damaging effects of the virus and prevents it from stopping their power in the first place, and obviously from killing them.
This is just conjecture of course - it is possible that they would still be vulnerable to it, but I fail to see how Claire could save the world if she can be killed by the virus just as easily as anyone else.
This does present an interesting possibility though - if Adam & Claire are immune to the damaging effects of the virus, but unable to cure it in themselves, then perhaps it is actually one of them who spreads it to the world? They become a carrier - immune to the harmful effects, but incapable of overcoming the disease altogether and being highly contagious - so anyone nearby is infected and later dies...?
Haven't we heard Kensei was kept locked-up for several years? He couldn't be Pa Petrelli, as he was interactive with the family until his recent "death."

if papa petrelli died only recently... even if it was before peter or nathan were born adam would still have been in jail. .
